Assistant Food & Beverage Manager
SUMMARY**
The Assistant Food & Beverage Manager supports the Director of Food & Beverage in overseeing daily operations across the hotel’s vibrant outlets: **JWB Grill** (the signature upscale casual restaurant featuring chef-driven coastal cuisine, Southern-inspired dishes, and classic Cheeseburgers in Paradise), **Fins Bar & Rooftop** (the hippest high-volume rooftop bar with beach-bar vibes, skyline views, live music, and tropical boat drinks), **Starbucks** (the on-site branded quick-service café serving coffee, breakfast, and grab-and-go favorites), and banquet/private dining operations.
This role ensures every outlet delivers the signature Margaritaville experience — relaxed, welcoming, fun, and service-driven — while maintaining the highest standards of health, safety, sanitation, and alcohol awareness. You will play a key role in driving revenue, guest satisfaction, team engagement, and operational excellence across diverse service styles, from elevated dining to high-volume rooftop energy and speedy coffee service.
As a visible leader, you will train, supervise, schedule, and coach team members, maintain a strong presence on the floor, engage directly with guests, and support vendor relationships — all while keeping the “no worries” island spirit alive in downtown Nashville.
**QUALIFICATIONS**- Ability to read, write, and speak English fluently.
- 1–3 years of experience in hotel or multi-outlet food & beverage operations preferred.
- Strong experience in high-volume restaurant, bar, and/or rooftop lounge environments is highly preferred.
- Previous supervisory or management experience required.
- Hands-on experience in at least one of the following is preferred: bartender, server, barista, or host.
- Knowledge of coffee service standards and Starbucks operations is a plus.
- Food/Beverage Service Worker Permit (where applicable) and responsible alcohol service certification.
- Strong interpersonal, communication, and leadership skills.
- Open availability is required, including nights, weekends, and holidays — because in Margaritaville, the good times keep rolling.

- Ensure service standards reflect both upscale hospitality (JWB Grill) and energetic social atmosphere (Fins Rooftop with skyline views and live music).
- Train and empower the team to deliver personalized, memorable “fins up” moments for every guest.
- Assist in managing multi-outlet budgets, forecasts, and labor costs.
- Analyze revenue streams across full-service dining, high-volume bar/lounge, and quick-service coffee operations.
- Adjust staffing and inventory to align with seasonal demand, hotel occupancy, arena/concert events, weather-driven rooftop traffic, and local Nashville happenings.
- Ensure proper cash handling and strict adherence to internal audit controls.
- Foster a positive, inclusive, and high-energy team culture that reflects Margaritaville’s “License to Chill” values.
- Recruit, train, and develop team members across varied service styles.
- Provide targeted coaching for each outlet: elevated service and presentation for JWB Grill, fast-paced bar execution and tropical cocktail craftsmanship for Fins Rooftop, and speed with consistency for Starbucks.
- Support career growth and leadership development while ensuring compliance with all safety and certification requirements.
- Uphold consistent food, beverage, and service standards across all outlets, from Southern-coastal dishes at JWB Grill to signature margaritas and boat drinks at Fins.
- Maintain excellent health inspection scores and rigorous sanitation practices.
- Oversee beverage quality, including craft cocktails, beer, wine selections, and the full Starbucks coffee program.
- Ensure rooftop operations meet safety standards, especially during peak-volume periods with live music and skyline views.
- Monitor equipment performance and coordinate preventive maintenance.
- Support execution of outlet-specific promotions, events, and seasonal programming — with special focus on rooftop activations, live music nights, and tie-ins with Bridgestone Arena or Nissan Stadium events.
- Collaborate with vendors to secure quality products at optimal costs.
- Dynamically adjust operations based on occupancy, weather (critical for the rooftop), and downtown Nashville’s vibrant event calendar.
- Maintain tight inventory controls across all food and beverage programs.
- Provide hands-on leadership and support across JWB Grill, Fins Bar & Rooftop, Starbucks, and banquet operations.
- Maintain working knowledge of all positions, including restaurant service, high-volume bar operations, rooftop service, and coffee/barista standards.
- Ensure a consistent, memorable guest experience across multiple service formats.
- Oversee liquor, beer, wine, non-alcoholic beverages, and the full coffee program.
- Manage inventory, ordering, and cost controls for all outlets.
- Enforce staff appearance and grooming standards that reflect the fun, polished Margaritaville brand image.
- Control labor costs while aligning with forecasted business levels.
- Maintain cleanliness, organization, and safety across all areas.
- Support banquet setup, service execution, and billing.
- Handle guest concerns with professionalism, creativity, and the signature Margaritaville “no worries” attitude.
- Conduct training sessions, create schedules, and perform performance evaluations.
- Step into operational roles as needed during peak periods to support the team.
- Help drive rooftop programming and high-volume event execution with live music and tropical energy.
- Attend all required meetings and provide regular updates to the Director of Food & Beverage and leadership team.
- Complete other duties as assigned.
